Vegan Chocolate Silk Pie Bites

Ingredients:
- 12 oz vegan chocolate chips, melted
- 2 cups cashews, soaked in hot water
- Line a mini muffin tin with liners. In a food processor, process the cashews until they form a thick cream. With the machine running, add the melted chocolate chips. Scrape down the bowl and process until combined. Scoop small amounts into each of the prepared cupcake liners. Allow the bites to set in the fridge or freezer for at least 30 minutes. They can be eaten frozen, although they are great at room temperature as well. Store any leftovers in the freezer.
