Garlic and Thyme Sauteed Green Beans

Serves 4
Ingredients:
- 1 lb green beans, ends trimmed
- 1 tbs and 1 tsp olive oil
- 1/2 cup water
- 1/4 tsp ground thyme
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 cloves garlic, minced
- Heat 1 teaspoon of olive oil in a 12 inch non-stick skillet over medium-high heat until smoking. While the oil is heating, combine the rest of the olive oil, thyme, salt, pepper, and minced garlic in a small bowl and set aside. Add the beans to the skillet and cook, stirring occasionally until spotty brown, 6 to 8 minutes.
- Add water, cover, and cook for 2 to 3 minutes. Remove lid, increase heat to high, and cook until the water evaporates.
- Add the olive oil mixture and saute until the beans are bright green and tender but still crisp and beginning to wrinkle, 1 to 3 minutes.
